To many, the liquid highlight of a Burgundian vacation is a visit to the Marché aux Vins, where, in flickering candlelight and armed with your own tastevin (which you get to keep as a souvenir), you can sample a tongue-tingling, mind-spinning array of regional wines in the atmospheric setting of barrel-strewn cellars and vaulted passages. The selection runs from young Beaujolais to famous old Burgundies, and there's no limit on how much you drink and no need to reserve. Other Beaune tasting houses include Cordelier on the Rue de l'Hôtel-Dieu and the Caves Patriarche on the Rue du Collège.
