Set on a magical presqu'île (peninsula) called the Pen Lan point, this enchanting collection of 15th- and 16th-century Breton stone buildings resembles a tiny village; one, however, that is surrounded by terraced gardens, has a spectacular spa, and offers grand vistas of the Bay of Vilaine. Once you step through the "Portail de la Verité"—a monumental 13th-century stone entryway—the interior allures with a mix of old and new, seen most elegantly in the restaurant, where Baroque ex-votos, Louis Treize chairs, rock-face fireplaces, and plate-glass windows make a suitable backdrop for the delicious cuisine of chef Patrice Caillaut (formerly of Ledoyen and Troisgros). Delights continue in the guest rooms, asparkle with checked fabrics, veneered woods, and modern furnishings. Most rooms face the ocean, so be sure to specify, especially if you want to call the 270-degree view from the Admiral's Room your own. To get your toes in the water, head to the alluring spa, the Aqua Phénica, replete with a full spectrum of seawater hydrotherapy facilities and gigantic indoor pool. One drawback (especially in rainy weather): the complex is made up of little pavilions, and you need to negotiate lots of steps and paths. Pros: stylish decor; ocean views; superb spa facilities.
