The story behind Zinc, the house restaurant of the Hilton Old Town hotel, is a comic case of culinary musical chairs. The site first held celeb-chef Gordon Ramsey's Maze restaurant, but after that shuttered, head chef Ari Munandar was quickly brought in from the Mandarin Oriental. The result? A successful mix of European and Asian flavors that's bringing in the crowds. Zinc may lack Ramsay's flair, but it's much more consistent, and for a Hilton, that's the sweet spot. Sink back into the dark banquettes under an open skylight and sample plates like miso-glazed sea bass and tuna-salmon sashimi with quince ponzu.
