Hemingway, a Croatian chain of cocktail bars for the upwardly mobile, is spreading across the country, and tends to thrust its nose in the air wherever it goes. Pack your wallet with at least one gold card if you're planning on gaining entry to the elite bar in this most elite of resorts. Wood is big here, and it gives a warmer feel than might be expected among the dressed-up clientele. The two floors offer a rainbow of cocktail choices on three terraces, including one up on the roof that spies down on the small harbor.
