In a carefully restored 14th-century palazzo opposite the historic St. James Cathedral in Šibenik sits Pelegrini, one of seven restaurants in Croatia to hold a Michelin star—and the only one in Central Dalmatia to do so. Pelegrini's menu features traditional Dalmatian cuisine that is innovatively prepared, with exquisite flavor being the restaurant's guiding principle. Look out for shark ravioli, carrot with mussels and sausage, and nectarine cheesecake. The service is impeccable, the atmosphere unique, and the wine list is a throrough presentation of local and international labels. For dinner there is a minimum of four courses that can be chosen from a selection of up to 34 dishes.
