There are hundreds of restaurants in Brugge, ranging from taverns offering a quick snack to stylish establishments serving Flemish or international (albeit mostly French) delicacies. Seafood is great here, as the coast is nearby; meals cooked with Belgian beer are a treat as well. While in the Markt, snack like a Belgian with mayonnaise-covered fries.
Unless you're going to a high-class restaurant, casual dress is always appropriate. You should make reservations, especially on weekends and holidays. Otherwise, your best strategy for getting a table is to come just as the restaurant opens or after the main rush. The busiest mealtimes tend to be from noon to 1:30 and 7 to 9. After 10 pm it can be hard to find restaurants that are still serving. Many restaurants serve meals outdoors, even in winter on heated terraces. A 16% service charge and a 19% V.A.T. are always included in the tab, so you don't need to leave a tip, although most people round off upwards.
