Rochefort

It's a pity that the Abbaye de St-Remy (about 3 km [2 mi] north of Rochefort), where the delicious 6°, 8°, and 10° Trappist beers are brewed, isn't open to the public. It's possible to spend a period of reflection within the walls, but tourists are not welcome—the 15 remaining monks are firm about this. The monks preserve an austere life, talking only when necessary, for example. The recipe for the beer remains a mystery. We know that they use water from a monastery well and that coriander and sugar candy are added during the brewing process. But really, the only thing we know for sure is that their beers taste heavenly.
