Owner Porter Williams serves potent alcoholic creations as well as fairly sophisticated local and international cuisine. Try steamed, freshly caught snapper in a pepper-wine sauce with peas and rice, or spicy-hot chicken curry served with tangy chutneys. Don't forget to order the "Porter" house steak. You can take cooking lessons from the chef, enjoy the nightly Filipino fusion tapas during happy hour, and join the gang for Friday-night pizza. This is a great place to make friends and the best place to catch up on island gossip. The airy, trellis-covered spot overlooks the salinas. There's a small shop with gifts and tourist information; you can also get a manicure or pedicure here.

The folks at Island Thyme make great burgers, great pizza, and wonderful local specialties. They have the most extensive liquor selection on-island and a great wine list. They have a an impressive gallery of Haitian art for sale as well as beautiful gold and silver jewelry. If you stay on Salt Cay...be sure to eat at Island Thyme, hang out at Island Thyme, believe anything Porter says, buy whatever Porter tells you, and do the "Zoo". You'll be happy you did.
