Island Spice

$$-$$$, Eclectic, St. Kitts

Fodor's Review:

Though owner-chef Lynn Williams had worked in relative anonymity at various hotels for 20 years, he'd gained the respect of his peers, as well as a loyal local following. He finally opened his own marvelous eatery in a nondescript space (gussied up with handsome rotating artworks -- all for sale -- hurricane lamps, exhibition kitchen, and trellis-patterned ceiling). When pressed, he'll shyly describe his fare as "refined Caribbean fusion." It's that and more. The food is perfectly cooked, beautifully presented, and sensuously textured, especially the silken sauces. Witness melting conch in garlic butter, lemon-scented beer-batter grouper with tamarind-tomato essence, rib eye with mango-red wine reduction, peanut-crusted chicken breast with banana curry, or New Zealand lamb chops in merlot cane-sugar syrup. Desserts disappoint somewhat -- but you won't have room for them anyway.
