Chef Orlando Satchell, British-born of Jamaican/Barbadian heritage and certainly a man on a mission, spent a dozen years as executive chef at Ladera's famed Dasheene Restaurant. Now he has spread his wings even further and opened his own restaurant and bar in downtown Soufrière. Orlando's self-described style of cooking is, and always has been, "Share The Love," or STL, with a focus on Caribbean cuisine. He supports local farmers and fishers by using only locally grown
meats and organic produce and freshly caught fish in his delicious—and definitely world-class—dishes. Although he is known to be somewhat flexible, dinner offers a choice of two set five-course menus—starting with soup (pumpkin is the best!) and salad, then a fish dish followed by beef or chicken, and ultimately dessert. It's clear that Orlando loves St. Lucia, especially Soufrière.
