The refined dining room at the Rawlins Plantation Inn has fieldstone walls, lovely family antiques and period furnishings, and high vaulted ceilings. The four-course but limited prix-fixe dinner emphasizes local ingredients, many coaxed from the hotel gardens: witness pork tenderloin stuffed with caramelized apples and flambéed lettuce; or shrimp ceviche with coriander and sour oranges, capped by banana puffs with lime sauce or chocolate terrine with passion-fruit sauce. The bountiful, very popular lunch buffet offers such classic West Indian items as breadfruit salad, shrimp fritters with mango salsa, and lobster and spinach crepes.
