The pool area of Horizons Villa Resort is transformed into a stylish eatery thanks to smashing ocean views, potted plants, serenading tree frogs, and elegant candlelit tables. Jamaican chef Verral Marshall fuses ultrafresh local ingredients with global influences. Recommended offerings include scallop-and-coriander wontons, pan-seared duck breast with raspberry-ginger sauce, or portobello-stuffed tortellini with shrimp in creamy tomato-basil sauce. Most dishes are regrettably more orthodox, and the execution is increasingly uneven, especially now that Verral has opened two more restaurants (Diamond Cut Steakhouse in Frigate Bay, and a branch of Marshall's on Nevis).
