Jamaican chef Verral Marshall fuses ultrafresh local ingredients with global influences. Recommended offerings include grilled swordfish with passion-fruit beurre blanc, pan-roasted duck breast with raspberry-balsamic sauce, or homemade sorbets. Most dishes are regrettably orthodox (rack of lamb in port reduction) if artfully plated, and the execution is uneven.
