Peter Schintler, the U.S.-born owner-chef of Old San Juan's hippest—and finest—restaurant, apprenticed with Raymond Blanc and Gordon Ramsay. Here he's created a class act famous for its ultra-chic lounge bar. The restaurant's sensual and minimalist orange-and-white decor features high-back chairs and cushioned banquettes. The menu uses many sustainable and non-modified ingredients prepared California-French fashion, resulting in complex flavors and strong aromas. The yellowtail is served with lemongrass and compressed watermelon while the pork cheeks are served with a peach-poblano marmalade. For dessert, indulge in the Millionnaire's ice cream, topped with honeycomb and shaved truffles. You can build your own four- to six-course tasting menu, with or without pairings from the Wine Spectator Award of Excellence wine list, or order à la carte. We were here strictly by chance. Looking for a place to eat and saw the menu posted outside. What a wonderful surprise! Fabulous food, great service and when we asked to meet the chef, he came to our table and talked about how he came to be there and the food he prepares. A great experience!

The owner and chef took our order explained the plates and served us. The food is five star, I did the six course meal,,the price is high and well worth it, if u can't afford it don't bother going in the door, the finest food I've ever eaten, excellent service and atmosphere, would recommend to everyone I know to eat here if they come to San Juan.
