On the second floor of the St. Regis Bahia Beach's main Plantation House building, this stylish restaurant's indoor/outdoor space is a mix of textures and colors—banquettes with red pillow accents, mesh lamps, metallic-cork wall coverings, recycled kumbok wood tables with tangled brass legs—that create a lush environment for Jean-Georges Vongerichten's Caribbean-Latin inspired menu. An $82 tasting is available for those interested in sampling the menu's featured dishes, which include a delectable black-pepper octopus laced with indigenous aji dulce (sweet chile) for appetizer, and grouper with black beans and marinated beef-tenderloin entrées. Service is impeccable, and the extensive wine list will delight oenophiles. Save room for dessert; the warm apple crumble is irresistible.
