An excursion to Depaz Distillery is one of the best things to do on the island; plan to arrive at least an hour before closing as the doors shut promptly at the closing time. Established in 1651, it sits at the foot of the volcano. After a devastating eruption in 1902, the fields of blue cane were replanted by visionary Victor Depaz, and in time, the rum-making began all over again. A self-guided tour includes the workers' gingerbread cottages. The tasting room sells Depaz rum, including its golden and aged rums, as well as liqueurs made from orange, ginger, and basil (among other flavors) that can enhance your cooking. Guests can tour the château (or castle) to see the smoking and game rooms, the dining and archive rooms, and the office of Victor Depaz. Allow time and make a reservation for Depaz's restaurant, Le Moulin a Canne (0596/69–80–44).
