To really experience this place, start with a cocktail in the superchic bar lined with old black-and-white photographs of the island; a simple 'ti punch gets an elaborate presentation. Le Bélem is the special-occasion restaurant for the well-heeled who enjoy innovative cuisine served in a contemporary setting. Alas, it is not inexpensive, but the complimentary amuse-bouche (single, bite-size hors d'oeuvres) may save you an appetizer, although the lobster ravioli is luscious. Terrine de foie gras, with apples caramelized in vanilla butter enhanced by a reduction of port and balsamic vinegar, is heaven on a plate. The menu changes seasonally and features such creations as linguine with truffles, scallops, cream, and a shellfish reduction dramatically presented by a bevy of servers. Lunch at Campeche, the beach restaurant, although less glamorous, is still decidedly a treat, and provides a more affordable alternative. It opens for dinner in high season. Hotel guests take breakfast at Le Bélem, and during high season, the main restaurant is open seven nights a week.
