Sepia-tone lithographs of old St-Pierre adorn the walls of this gourmet restaurant with a panoramic view of Fort-de-France. The prix-fixe meals can be an especially good value (€34), but the most intriguing dishes are à la carte, which are rather pricey. Foie gras with local pleurote mushrooms and pineapple chutney is an excellent starter. The cassoulet of scallops or veal medallions in a ginger sauce with Duchesse potatoes and bacon-wrapped asparagus are just a couple of examples of the outstanding main courses. The wine carte has been upgraded; ask about the specially priced wine of the month. Now that the hotel's brasserie is no longer, Le Dôme is serving lunch and dinner, and it is wise to make a reservation (although not mandatory).
