This historic sugar mill is the backdrop for the artistic creations here, which preserve great French cuisine, yet bow to more recent culinary trends and cleverly use local produce. Desserts are dazzling, with lots of towers, sauces, and glacés. A classic like panna cotta with raspberries is the centerpiece in passion fruit soup. Each evening there is a menu du jour, a three-course dinner with two choices for each, moderately priced at €50. An appetizer and a main or a main course and a dessert can be had for €40. On the à la carte menu, any starter is €15; any main is €28, be it lobster, duck confit, or rack of lamb. The menu changes daily now and you may be treated to sea scallops flamed in vintage rum and topped with blood-orange butter. That is gastronomic elegance.
