Guests first climb the worn yellow stairs, and the decks of various levels because of the panoramic sea views, but they return again and again for the food. The view is gorgeous in daylight, and you watch the dive boats going to Pigeon islands and a veritable parade of marine action. Begin with a perfectly executed mojito. Fish is fresh off the boat, so don't hesitate to try the sushi antillaise or grilled crayfish; or better yet have these jumbos in a rich cream and rum-laced sauce—a two-napkin affair as the shells are left on. Select your lobster from a pool. The fresh fish is the way to go here, served with a passion-fruit sauce, a vanilla sauce, or sauce chien (spicy creole sauce.)
