Fine dining is served aboard Västra Banken, a historic lightship that was brought to Grenada in 2006 as the centerpiece of Le Phare Bleu Marina Hotel. Guest chefs—a new one each year—use local ingredients to create contemporary cuisine served in a setting that's both nautical and intimate. You might enjoy seafood ravioli or a callaloo and crab soufflé appetizer, followed by roasted rack of lamb or seared swordfish. The warm home-baked breads are wonderful, but the chocolate-plate dessert takes the cake. Before dinner, drinks are served on the top deck, under the stars.
