Xamana is a collection of firsts, the most important being that it's the first restaurant in Samaná to take itself seriously. Believe it or not, this is the only air-conditioned restaurant on the entire peninsula—and the only one with imported meat on the menu. Yes, someone has invested money in the attempt to draw comfort seekers. The owners, as well as general manager Franco Bianchimani, come from Santo Domingo's Caffe Bellini, one of the country's most reputable establishments. Come for the floor-to-ceiling glass window views of the bay from the second-floor dining room. Sleek black-and-white chairs and stylish settings raise the bar, and leave the thatch-roof clichés in the dust. Start with a regional specialty, lambí sautéed with lime, white wine, garlic and fresh ginger. Entrées include Mediterranean-style mahimahi. The homemade tiramisu is hard to beat on the dessert menu. And at meal's end, savor a shot of the complimentary chinolacello or mangocello liqueurs mixed with seasonal passion or mango fruit.
