The newest restaurant on the island is arguably the island's best. Chef Vincent Binet, formerly of Habitacion Chabert (now Silks Hotel) has created a modern, minimalist venue with white walls, contemporary art, Frank Lloyd Wright-styled chairs, and dinnerware that look like warped squares—certainly not what one would expect to find in a Dominican restaurant. Impeccable service and special touches like a timer for brewing tea and chive butter add to the ambience. But the real star is the food. Starters like goat, mozzarella, or blue cheese tartlets with apple-and-raisin salad are lip smacking, while a main course like roast saddle of lamb in garlic sauce is so tender it practically melts in your mouth.
