James Beard Award–winning chef Michael Schwartz and handpicked executive chef Thomas Tennant have successfully imported the slow-food philosophy of the groundbreaking original Michael's Genuine in Miami. Seasonal menu items come from the on-site garden, and from carefully chosen Cayman farmers, fishermen, and ranchers. The results live up to the Schwartz mantra of "fresh, simple, pure": honest, uncluttered food that sings with color and flavor right down to the homemade sodas. Lunch offers a more traditional but lengthy selection, whereas dinner dishes are divided into small, medium, large, and extra-large portions to encourage family-style sharing and exploration. Sublime staples on the ever-changing menu include burrata (look for such seasonal standouts as heirloom tomato or breadfruit) and crispy yet unctuous sweet-and-sour pork belly. You can't go wrong with any wood-oven-roasted dish, whether pizza, snapper, or poulet rouge chicken. The well-considered wine list offers occasional bargains; the menu suggests creative pairings from the vast beer selection. Tennant has also devised an inspired solution to the invasive lionfish population: look for it as a menu special, and if you dive, ask about the Lionfish Safari.
