Papa Zouk

$$-$$$, Caribbean, St. John's

Fodor's Review:

Who would have thought that a jovial globe-trotting German gent could create a classic Caribbean hangout? But the madras tablecloths, fishnets festooned with Christmas lights, painted bottles of homemade hot sauces, colorful island clientele, and lilting rhythms on the sound system justify the name (which describes the sultry, musical stew of soul and calypso). Seafood is king, from Guyanese butterfish to Barbadian snapper, usually served either deep-fried or steamed with a choice of such sauces as guava-pepper teriyaki or tomato-basil-coriander. Tangy Caribbean bouillabaisse with garlicky Parmesan mayonnaise and fish 'n' rum (spike it with a vinegar hot sauce) are specialties, as are the knockout rum punches. Finish dinner (and yourself) off with a snifter of aged rum: the tiny bar holds 200 varieties from around the globe. Dine family-style in front or more intimately in back.
