Considered by many to be the best of Port Vila's restaurants, Elan has a stellar position right on the water not too far from the cruise-ship port. Pop in for lunch or arrive early for dinner to grab a table on the deck to soak in the sunset. It's still fairly new, so get directions from hotel staff before setting off (some cab drivers still don't know about it)—the adventure will take you out of the town and along a pretty bumpy road. and Darryl, the restaurant is elegantly decorated with colonial wicker, and the cuisine is French and international. Start with tuna carpaccio and scallops or crab cakes, then try a hearty seafood paella or tuck into a great steak. Round off with a sweet favorite, like homemade crème caramel.
