Chef Giuseppe Pagliaricci takes an imaginative yet simple approach to the cuisine of his native Umbria. Only the freshest produce is used for such creations as filetto in crosta (an eye fillet of beef double crumbed, pan-fried, and served in a bed of porcini mushrooms); or nodini di vitello con salsa d'asparagi (loin of veal pan-fried and served in a fresh asparagus sauce). The six-course degustation menu highlights the best of the house.
