Verdant bushland and a carefully manicured vineyard surround Heath Townsend's restaurant at the Wise winery. Simple, mostly locally sourced ingredients are transformed here into such culinary delights as twice-cooked duck with burnt orange sauce; lamb rump with eggplant puree, green beans, and almonds; and venison with gnocchi, diced tomato, oregano, and capers. Views of Eagle Bay complete the dining experience. Five homey chalets with names such as Teahouse, Potter's Cottage, and Doll House are also available for accommodation. Reservations for the restaurant are essential.
