Chef Guillaume Brahimi rattles the pans at possibly the most superbly situated dining room in town. Tucked into the side of the Opera House, the restaurant affords views of Sydney Harbour Bridge and the city lights. Brahimi's creations soar: try the marron on a bed of sealed foie gras, duck confit, and smoked duck consomme, and continue perhaps with the slowly cooked blue-eye trevalla with a lemon emulsion and Sterling caviar. Better yet, work your way through the eight-course degustation menu (A$180).
