The area's first winery, Sevenhill Cellars was created by the Jesuits, and they still run the show, with any profits going to education, mission work, and the needy within Australia. In the 1940s the winery branched out from sacramental wine into commercial production, and today 14 wine varieties, including Riesling (try the St Aloysius label), verdelho, grenache, and fortified wines, account for 75% of its business. Book a guided tour with the charming Brother John May, Jesuit Winemaker Emeritus, who takes you to the cellars, the cemetery, and the church crypt where Jesuits have been interred since 1865. You can also rent bicycles here to explore the rolling hills and vineyards.
