The waiters here will happily give you a lesson in how Sundanese food differs from other Indonesian foods, before trying to persuade you to sample at least one of the regional specialities. At the top of their list is a charcoal dish, preferably the delicious barbecue fish, with several smaller dishes to share. You might start with keredok (vegetables in spicy peanut dressing), continue with taupok goreng isi (bean-curd-skin rolls stuffed with scallops, prawns, water chestnuts, and mushrooms); and sedap ikan snapper bakar (broiled red snapper in sweet sauce).
