Built in 1908, it was home to Singapore's fire chiefs for most of the 20th century before being transformed into a modern Australian restaurant. Opt for a seat on the balcony where you can admire the garden, which twinkles with subtle fairy lights at night, or admire the exceptional photographs of Singapore. The menu changes regularly, but staples include homemade breads, lobster bisque, lamb with Parmesan crust, and Roma tomato tart.
