Japan enjoys a special reputation for its lovingly raised, tender, marbled domestic beef. Try it, if your budget will bear the weight, at Rangetsu, in the form of this elegant Ginza restaurant's signature shabu-shabu or sukiyaki course. Call ahead to reserve a private alcove, where you can cook for yourself, or have a kaiseki meal brought to your table by kimono-clad attendants. A lunch course is available for ¥1,800 on weekends. Rangetsu is a block from the Ginza 4-chome crossing, opposite the Matsuya Department Store.
