With meals cooked from organic ingredients and chemical-free tatami mats in the rooms, the Yoshimizu is an environmentally friendly ryokan in the middle of Ginza. This modest inn, at which you are expected to fold your futon, exemplifies exquisite taste with its interior appointments: wooden floors dyed pale indigo, hand-painted shoji screens, and basins of Shigaraki ware in the washrooms. The two stone communal Japanese baths on the ninth floor can be reserved for a private relaxing soak for two. The inn is a few minutes' walk from the Tsukiji Fish Market. It's popular, so book early.
