When in Kumamoto, do as the locals do—eat some ba-sashi! If you order the Nishiki Set (¥6,300), you can get it served in all its forms: there's a starter of raw tidbits with garlic, ginger, and assorted dunking sauces; or a finale of hari-hari nabe, a soup of thinly sliced delicately flavored meat (still horse), and vegetables cooked in a folded-paper vessel that doesn't burn. Sit at the bar for a delightful atmosphere of friendly frenzy, or kick back at one of the secluded tables.
