Taiwanese expats pack the dining room of Bellagio, so you know this is an authentic taste of Taiwan. Red fabric–covered chairs and black streamlined tables contrast with the white walls and decorative moldings. Waitresses with short, chic hairstyles move efficiently between the closely spaced tables. The menu includes such traditional entrées as three-cup chicken, as well as 25 noodle dishes spanning all of Southeast Asia. Save room for dessert: shaved-ice snacks are obligatory Taiwanese treats, and come in 14 varieties. The Gubei and Hongqiao branches tend to be filled with Asian expats, while the downtown outlets see more Westerners.
