This Hokkaido-imported chain does some of the best Japanese ramen in town. The noodles are thick, glossy, and perfectly al dente but it's the sensational savory broths that set Santouka apart. The signature shio (soy sauce) broth coats each strand of noodle to flavor perfection. The salt- and miso-flavored broths are also delicious. Topped with slices of fatty chasiu (Japanese roast pork) and kelp, this a simple bowl of noodles worth making a special trip to try. Even better, we recommend topping the glistening yellow noodles with a Japanese-style poached egg—the runny yolk adds an indescribable dimension to your bowl of noodles.
