$$-$$$$, Chinese, Admiralty
Fodor's Review:
The big, open, banquet-style room with the rows of round tables is the most authentic format for Cantonese high dining, and in a city full of flashy, postmodern restaurants, it's nice to see the JW Marriott's flagship Chinese dining room still wedded to tradition. The same can be said for the food: it's high-end and well-executed, but you won't find fusion here. This is a good place to try abalone (such as braised chicken with fresh abalone in a casserole), fresh fish (pan-fried garoupa in soy sauce has a wonderfully delicate flavor), and Cantonese classics like the impossibly light, roast crispy suckling pig, with its skin the consistency of a wafer -- it's one of the best in the city.
