One of the most deservedly renowned of Hong Kong's "private kitchens," Bo Innovation is a little gem that serves a kind of Japanese-Chinese-French fusion. It feels more upscale than most speakeasies, with sleek lines, dim lighting, and an open kitchen. The food, likewise, is unusually original. Chef-renaissance man Alvin Leung has a particular way with foie gras, which seems to make its way into most dishes in some way or another. Don't be shocked if it winds up paired with toro sashimi—two rich softnesses blending into one. And if you engage in a conversation with Alvin, you might end up learning something about musical acoustics—or wines from Burgundy.
