This Cantonese restaurant in the InterContinental Hong Kong sets formal elegance against expansive harbor views, and its food is at the top of its class in town. Exquisite is hardly the word for the place settings, all handcrafted with green jade. Equally successful are dim sum, sautéed Wagyu beef with mushrooms and shishito pepper (a mild green chili pepper), and exemplary braised whole abalone in oyster sauce. The vast selection of seafood transcends the usual tank to offer a selection of shellfish like red coral crab, cherrystone clam, and sea whelk. There is also a selection of "health" dishes, showcasing the hotel's innovative preventative health concept with delicious and nutritious dishes created by Chef Lau Yiu Fai. Shorts are not allowed.

    Largely unmemorable food - frog legs are essentially flavorless (can't even remark "tastes like chicken"). The only thing I'd go for again would be the "crispy milk" - custard captured in perfectly-fried pockets that are sized like giant tater tots. Expect the service to outshine the scenery and food.
