One of the most deservedly renowned of Hong Kong's "private kitchens," Bo Innovation is a little gem that serves a kind of Japanese-Chinese-French fusion. It feels more upscale than most speakeasies, with sleek lines, dim lighting, and an open kitchen. The food, likewise, is unusually original. Chef-renaissance man Alvin Leung has a particular way with foie gras, which seems to make its way into most dishes in some way or another. Don't be shocked if it winds up paired with toro sashimi -- two rich softnesses blending into one. And if you engage in a conversation with Alvin, you might end up learning something about musical acoustics -- or wines from Burgundy.
