Perhaps in reference to Hong Kong's many yoga studios, Tsim Sha Tsui's gracefully arching One Peking Road building seems to be doing a giant steel back bend. This trendy restaurant and bar is in the penthouse, and goes by many names (Aqua Tokyo, Aqua Roma, Aqua Spirit). Similarly, the chefs here wear many hats, for instance combining sashimi, crab tempura with crab roe miso, and a heavy risotto into one meal. The raw fish, flown in from Japan, is a better choice than the uninspired pasta, but the only thing really worth going to Aqua for is the superb view from the windows of the Hong Kong skyline. You might just stop in for a drink -- the bar stays open until 2 AM, 3 on weekends.
