Dining on haute Cantonese cuisine at the highest Chinese restaurant in Hong Kong, with panoramic views over Victoria Harbor, is indeed a memorable experience. The chef, Tam Sek Lun, is famed for adapting family-style recipes into works of art. The menu changes with the seasons and leans heavily toward fresh seafood, plus luxurious temptations like bird's nest and shark's fin -- although not everyone believes those items are necessarily worth the money, here or anywhere else. Lunchtime dim sum is recommended.
