Yangsiyang ("lamb, four types") consists of four "tough" types of tripe, accompanied by a homemade ground-sesame sauce. You may want to take the advice in Yang Miren's famous poem, which advises: "Just swallow the whole bit" when it's impossible to chew it. Shandan, or accordionlike tripe, is the most popular, although duren is amazing: tender but crispy. In addition to their tripe, they serve mutton prepared in a traditional coal-heated brass pot.
