Abrie Bruwer, winemaker and viticulturist at Springfield Estate, has a fan club, for good reason. Quality is assured, and if the wine doesn't meet Bruwer's stringent standards it isn't released. Although the cabernet has its loyal following, this innovative estate is best known for its unusual approach to white wines, especially chardonnay. The Méthode Ancienne Chardonnay is made in the original Burgundy style and is bottled only if it's perfect—which happens about
two years in five. The creamy Wild Yeast Chardonnay, with its all-natural fermentation, is an unwooded version of the above and comes highly recommended. Everybody is raving about the Whole Berry Cabernet 2007 and the Life from Stone Sauvignon Blanc 2008.
