The Western Cape Feature
Chances are you will either love or hate rooibos (red bush) tea, which South Africans drink in vast quantities. It has an unusual, earthy taste, and is naturally sweet. People drink it hot with lemon and honey or with milk or as a refreshing iced tea with slices of lemon and a sprig of mint. It's rich in minerals, such as copper, iron, potassium, calcium, fluoride, zinc, manganese, and magnesium; contains antioxidants; and is low in tannin. Best of all, it has no caffeine. Trendy chefs are incorporating it into their cooking, and you might see rooibos-infused sauces or marinades mentioned on menus. Rooibos leaves are coarser than regular tea and look like finely chopped sticks. When they're harvested they're green; then they're chopped, bruised, and left to ferment in mounds before being spread out to dry in the baking summer sun. The fermentation process turns the leaves red—hence the name.
