As this is widely regarded as the best Pan-Asian restaurant in town, it's worth putting up with the waiting lists, multiple seatings, and a complex menu that you'll probably need the server's help to wade through. The dim sum includes a spicy panfried lamb pot sticker with coriander and green chilies, and from the wok menu you can order salt-pepper calamari fried with five spices. Grills include mint lamb chops served with dry red chilies and garlic. On the sushi menu the salmon roses, thin sashimi curls filled with mayonnaise and topped with pink caviar, are outstanding. Multiple kitchens mean that cuisine arrives when it's ready. Although this provides the freshest dining experience, it may mean fellow diners watching while you eat, or vice versa. Haiku is owned by the same people who own Bukhara, the Indian restaurant above it.
