This 16th-century mid-medina palace is one of Fez's great traditional treats and retreats. The kitchen is known for the quality and quantity of everything from beef tagines to pigeon pastilla to mechoui, which must be ordered a day in advance. High ceilings and elaborate woodwork add to the sensorial rush of the place.

Keep in mind: Reservations essential.
