The specialty here is maklouba, a chicken-and-rice dish that the locals call "upside down" because servers seem to enjoy the diners' reaction as they turn the pot upside down with a flourish on the serving tray at the table. This is also a great place to try the Jordanian national dish, mansaf—lamb in a tangy yogurt sauce served over rice. Dessert, here and everywhere in town, means a tiny cup of strong coffee spiced with hel (cardamom) and a dish of baklava, or one of the many kindred versions of this Middle Eastern honey-and-pistachio sweet.
