Rising like a Byzantine, 14th-century Kasbah from the Palmery and surrounded by its own moat and acres of grounds, this hotel is the last word in sumptuous, escape-it-all luxury. From the moment its giant wooden doors swing open to reveal the central courtyard, restaurant, and heated swimming pool beyond, everything is calculated to impress. Ruins to explore at the bottom of the garden also contain a boutique from which visitors can purchase replica furniture. For such lavish surroundings, service has occasionally fallen just short of what you might expect, but this is still an unforgettable stay.
